Have you ever tried zoodles? They are a great low-carb, gluten free, healthy option for pasta and they even taste great! Seriously! They have a great texture that is pretty darn close to spaghetti. There are so many great ways to make zoodles and we’ve rounded up 30 of the best recipes for you to check out. Click on the link below each picture to find the direction to each recipe. I know you’ll find a new favorite zoodles recipe here!

Before we get to the recipes here are some tips to help you make zoodles:

Tips for making zoodles:

  • You can julienne your zucchini or even use a potato peeler, but that obviously takes more time than buying a spiralizer. They aren’t too much money (this one is less than $10!) and worth the investment if you like zoodles. And a spiralizer works for more veggies than just zucchini.
  • Try to buy zucchini that is straight for the most part, it makes it easier to turn them into noodles.
  • Cut the tips off of the zucchini so that they can secure on your zoodle maker more easily.
  • If you do have a bent zucchini you can make your zoodles in sections to make the process easier if you have a really long zucchini.
  • If you don’t get it right the first time don’t panic! It took me a couple of tries to feel like I knew what I was doing.
  • After making your zoodles place them on a paper towel on the counter and sprinkle with salt and let them sweat for 20-30 minutes. This helps release a lot of the moisture so you don’t end up with soggy noodles.
  • Zoodles don’t take long to cook. You basically just need to warm them up because if they cook too much they’ll be mushy. So you’re looking at 1-2 minutes!
  • One of the best parts of substituting zoodles for pasta is that you don’t have to cook them separately. You can cook them in the same pan with whatever sauce your making until they’re done.

If you’re looking for a zoodle maker (also known as a spiralizer), these are a few that I really like (click on the photos to check them out):

FAQs

How do you cook zoodles so they are not mushy? ›

To avoid soggy and limp noodles, I recommend cooking for only 3-5 minutes (5 if you're cooking more than 1-2 spiralized zucchinis) and tossing frequently. You want a slightly al dente noodle.

Should you salt zucchini noodles before cooking? ›

Should I Salt Zucchini Noodles? Don't pre-salt your zucchini noodles. First of all, one of the benefits of spiralizing is that it's SO quick (just spiralize, cook, and enjoy pasta in under 5 minutes!). Salting adds extra prep work.

Can you cook zucchini noodles in the microwave? ›

Place your zucchini noodles in a microwave-safe bowl. Add about 2 teaspoons of water. Cover the bowl with a damp paper towel. Cook for 1½ minutes.

Are zoodles supposed to be cooked? ›

Zucchini noodles do not need to be 'cooked'. Instead, try warming them up by tossing them in whatever sauce you'll be serving them with. For example, if making my Short Rib Ragu, all you need to do is add the drained zoodles to a pan with the sauce and toss to coat.

Why is my zucchini so slimy when I cook it? ›

This, the outlet asserts, is due to zucchini's high water content: If it cooks too slowly, it will release its moisture before it sears, becoming soggy and sodden. Over high heat, on the other hand, zucchini becomes caramelized on the outside but retains a meaty, firm texture within.

How do you keep zoodles from getting watery? ›

Salt and wrap your zoodles.

Let them sit for about 10–15 minutes — just enough time for the salt to extract the moisture. You may have to change the paper towels depending on how damp they get, but a gentle squeeze at the end will drain any leftover water before you sauté.

What does putting salt on zucchini do? ›

Salt causes zucchini rounds to release excess water. This important extra step helps the zucchini to sauté rather than stew in its own juices.

Is it better to cook noodles on the stove or microwave? ›

Purists might insist that boiling in salt water is the only way to cook pasta, but the microwave holds its own when it comes to perfectly al dente noodles. Not only is it faster than boiling water on the stove, but it's also more convenient and saves precious time in the kitchen.

How long do you microwave zoodles? ›

Microwave covered zoodles for 1.5 - 2.5 minutes. Don't be afraid to taste them after 1 minute or so to check the texture. The longer they are cooked, the more tender they become. I like my zoodles with a slight crunch, so I cook them for 1.5 minutes.

How do you cook store bought zoodles? ›

Bring a large pot of water to a boil over high heat, then season the water generously with salt. Add the zucchini noodles and cook until the noodles are crisp tender, 1 to 2 minutes. Use tongs or a spider to immediately transfer the zoodles to a large bowl filled with ice water.

What's the difference between zucchini noodles and zoodles? ›

Zucchini noodles can be made into different shapes, much like regular pasta. The most common way to make zoodles is to run the zucchini through a spiralizer, which makes a spaghetti-sized zoodle.

Why are my zoodles bitter? ›

Remove the Seeds: The seeds and surrounding flesh can sometimes contribute to bitterness. You can scoop out the seeds before cooking. Salt and Drain: Sprinkle salt on sliced zucchini and let it sit for about 15-20 minutes. This draws out excess moisture and bitterness.

Why is sauteed zucchini soggy? ›

Zucchini is made of over 90% water. When cooked, it gets soft and slowly releases that water into whatever dish you're cooking. If zucchini is overcooked, it will have a mushy, soft texture. In certain recipes, the author may recommend that zucchini be patted dry or salted and drained before cooking.

How do you firm up zucchini? ›

Arrange the zucchini pieces into a single layer on a baking sheet lined with parchment paper. (It will stick to the pan if you don't line it first!) Freeze the zucchini for about 1 hour, until it's firm to the touch, then transfer it to an airtight container to preserve the flavor as you store it.

What causes egg noodles to be mushy? ›

With their delicate composition, egg noodles can quickly absorb liquids and become overly soft. Adding them too early in the soup-making process might lead to a soggy, gooey outcome, losing that satisfying bite.

How long to salt zucchini to remove moisture? ›

If you do not have kosher salt on hand, use a teaspoon or so of regular table salt. 1. Place zucchini slices in colander and sprinkle with 2 teaspoons salt. Set colander over bowl until about 1/3 cup water drains from zucchini, about 30 minutes.

Why are my noodles always mushy? ›

You see, the reason those noodles in your homemade soup end up a soggy mess is that they're low alkaline. That means once submerged in a liquid and placed in the fridge, the noodles begin to absorb the liquid. If noodles absorb too much water, then they become soft and gummy as a result.
